Or even when specific emails are sent or not delivered.
In Zapier you will find the possibilities listed in points 1 and 2 under the "New Workflow Event" trigger and those in points 3 and 4 under the "New Workflow Step Event" trigger.

For example, you can update your opportunity stage when a related contact responds to your workflow.
